01 / ABOUT THE PLACE

About this place

Biting into one reveals a sharp, deeply caramelized crackle followed immediately by a luscious, custardy interior. Occupying the 1 floor of Shirokane The Sky, the specialty canelé shop Le Treize delivers the textbook textural contrast that defines the classic Bordeaux pastry.

The shop's signature Canelé de Bordeaux is baked in traditional beeswax molds, yielding a crunch on the outside and a springy, velvety crumb within. Gentle sweetness from egg and notes of dark rum permeate the batter, keeping the finish clean, balanced, and pleasantly aromatic rather than cloying. While the crisp snap on the day of baking is distinctive, letting them rest allows the flavors to settle and meld, offering a different pleasure for those who want to compare.

Beyond the classic variety, the boutique offers thoughtful flavor variations. Choices include the delicately spiced Cannelle and Chocolat Noisettine, rich with toasted hazelnut and dark chocolate, alongside seasonal offerings featuring ingredients such as hojicha or citrus. Assorted baked goods such as financiers and cookies are also on hand, making it easy to tailor a selection to individual tastes or gift occasions.

While primarily designed for takeout, the small shop packages its pastries in charming pink gift boxes and matching carry bags, making them popular for gifts. Le Treize opens on Fridays and Saturdays from 9:00 in the morning into the late afternoon, and accepts credit cards as well as PayPay. Whether as a centerpiece for weekend tea or a thoughtful gift for someone special, these meticulously baked pastries are well worth taking home.
